Cook Time

Cooking time for Chifrijo is also around 15 minutes. This includes cooking the rice and beans, frying the pork, and assembling the dish.

Ingredients

For the rice and beans:
  • 1 cup white rice
  • 1 cup black beans
  • 2 cups water
  • 1 tsp salt
For the pork:
  • 1 lb pork belly, sliced into small pieces
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 cup cornstarch
  • Oil for frying
For the toppings:
  • 1 tomato, diced
  • 1 avocado, diced
  • Salsa

Equipment

  • Large pot
  • Frying pan
  • Tongs
  • Knife
  • Cutting board

Method

1. Rinse the rice and beans and place them in a large pot with the water and salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the rice and beans are tender. 2. While the rice and beans are cooking, prepare the pork. In a bowl, mix together the cumin, paprika, garlic powder, and salt. Coat the pork pieces in the mixture, then dredge in cornstarch. 3. Heat oil in a frying pan over medium-high heat. Fry the pork pieces for 5-7 minutes, or until crispy and golden brown. Use tongs to remove the pork from the pan and place on a paper towel-lined plate to drain. 4. To assemble the dish, spoon the rice and beans into bowls. Top with the crispy pork, diced tomato, diced avocado, and a drizzle of salsa.

Notes

Chifrijo can be customized to taste by adjusting the amount of toppings or adding additional spices to the pork. It can also be served with tortilla chips or plantain chips for added crunch.
