Ingredients

  • 1 tsp sugar
  • 1 tbsp cornflour
  • 1 cup water
  • Salt to taste

Equipment

  • Wok or a large frying pan
  • Knife and chopping board
  • Spatula or wooden spoon

Method

  1. Heat oil in a wok or a large frying pan over medium-high heat.
  2. Add chopped onions, minced garlic, grated ginger, and chopped green chillies to the wok and sauté for a minute.
  3. Add chopped carrots and capsicum to the wok and sauté for another minute.
  4. Add salt to taste and mix well.
  5. In a separate bowl, mix Schezwan sauce, soy sauce, vinegar, red chilli powder, sugar, cornflour, and water.
  6. Add the sauce mixture to the wok and mix well.
  7. Add cooked rice to the wok and mix well with the sauce and vegetables.
  8. Cook for 2-3 minutes until the rice is heated through and well coated with the sauce.
  9. Garnish with chopped spring onions and serve hot.

Notes

  • You can add any vegetables of your choice to the recipe.
  • If you want to make a non-veg version, you can add shredded chicken, prawns, or scrambled eggs to the recipe.
  • You can adjust the spice level according to your taste.
