- 1 cup brown rice
- 2 cups water
- 1 teaspoon olive oil
- 1 teaspoon salt
- 2 teaspoons lime juice

Method
- Rinse the brown rice in a fine-mesh strainer under cold running water until the water runs clear.
- In a medium pot, bring the water to a boil over high heat. Add the rice, olive oil, and salt to the pot and stir well.
- Reduce the heat to low and cover the pot with a tight-fitting lid. Simmer the rice for 25-30 minutes or until all of the water is absorbed and the rice is tender.
- Remove the pot from the heat and let it sit for 5 minutes with the lid on.
- Remove the lid and fluff the rice with a fork.
- Add the lime juice and chopped cilantro to the pot and stir well.
- Transfer the rice to a serving bowl and enjoy!
