Ingredients

1 bunch fresh cilantro leaves
1 bunch fresh basil leaves
12 rice paper wrappers
For the dipping sauce, you'll need:
1/4 cup soy sauce
1/4 cup rice vinegar
1 tablespoon honey
1 tablespoon sesame oil
1 clove garlic, minced
1/4 teaspoon red pepper flakes (optional)
Equipment
You'll need a large bowl of warm water, a cutting board, and a sharp knife.
Method
1. Prepare all the vegetables and herbs by julienning them into thin strips. 2. In a small bowl, whisk together all the ingredients for the dipping sauce and set aside. 3. Fill a large bowl with warm water. 4. Dip one rice paper wrapper at a time into the warm water for 5-10 seconds or until softened. 5. Place the softened wrapper onto a cutting board. 6. In the center of the wrapper, place a small amount of each vegetable and herb, along with some chicken or shrimp. 7. Fold the bottom of the wrapper over the filling, then fold in the sides and roll up tightly. 8. Repeat with the remaining rice paper wrappers and filling. 9. Serve the rice paper rolls with the dipping sauce on the side.
Notes
You can use any combination of vegetables and protein for the filling, depending on your preference. You can also add noodles or rice to make the rolls more substantial.
