In a medium pot, add the rice, water, and salt and bring to a boil. 8. Reduce the heat to low and simmer for 20 minutes. 9. Add the kidney beans and pigeon peas to the pot of curry goat and stir well. 10. Serve the curry goat with the rice and peas.

  • If you can't find goat meat, you can substitute it with lamb.
