Ingredients

  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 10 lotus leaves, soaked in water until soft

Method

1. Rinse the glutinous rice until the water runs clear. Soak the rice in water for at least 2 hours. 2. Drain the rice and set aside. 3. In a saucepan, bring 2 cups of water to a boil. Add the pork belly and blanch for 2 minutes. Drain and set aside. 4. In a large mixing bowl, combine the soaked mushrooms, dried shrimp, dried scallops, soy sauce, oyster sauce, sesame oil, salt, sugar, and white pepper. Mix well. 5. Add the rice and pork belly to the bowl. Mix well. 6. Take a lotus leaf and place it on a flat surface with the shiny side facing down. 7. Spoon 1/2 cup of the rice mixture onto the center of the lotus leaf. 8. Fold the sides of the lotus leaf over the rice, then fold the bottom of the leaf over the rice. 9. Tie the top of the leaf with kitchen twine to secure the package. 10. Repeat with the remaining rice mixture and lotus leaves. 11. Place the packages in a steamer and steam for 1 hour. 12. Remove from the steamer and let cool for 5 minutes. 13. Unwrap the lotus leaves and serve.
