Ingredients

  • 2 cups glutinous rice

  • 1/4 cup dried scallops, soaked in water for 10 minutes and drained
  • 1/4 cup dried lotus leaves, soaked in water for 10 minutes and drained
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 1/4 cup scallions, chopped

Equipment

  • Pot for steaming

Method

  1. Rinse the glutinous rice in cold water until the water runs clear. Soak the rice in cold water for at least 2 hours or overnight.
  2. Heat the vegetable oil in a pan over medium heat. Add the Chinese sausage, dried shrimp, shiitake mushrooms, and dried scallops. Stir-fry for 5 minutes.
  3. Add the soy sauce, oyster sauce, sesame oil, salt, sugar, and white pepper. Stir-fry for another 2 minutes. Set aside.
  4. Drain the glutinous rice and mix it with the scallions.
  5. Cut the soaked lotus leaves into rectangles and place them on a flat surface. Place a sheet of parchment paper on top of the lotus leaves.
  6. Spread half of the glutinous rice mixture on top of the parchment paper. Spread the sausage and seafood mixture on top of the rice.
  7. Add the remaining glutinous rice mixture on top of the sausage and seafood mixture. Press down gently.
  8. Wrap the lotus leaves and parchment paper tightly around the rice mixture, forming a rectangular package.
  9. Place the package in a bamboo basket and steam over high heat for 45 minutes to 1 hour, or until the rice is cooked through.
  10. Cut the package into slices and serve hot.

Notes

  • You can substitute the Chinese sausage with any other type of sausage you like.
  • You can also add other ingredients such as mushrooms, chestnuts, or dried fruit to the rice mixture.
  • If you don't have lotus leaves, you can use banana leaves or parchment paper instead.
