Method

  1. In a medium-sized mixing bowl, stir together the peanut butter, honey, and cocoa powder until smooth.
  2. Add the crispy rice cereal to the bowl and stir until it is evenly coated with the peanut butter mixture.
  3. Add the mini chocolate chips to the bowl and stir until they are evenly distributed throughout the mixture.
  4. Lay out a sheet of parchment paper on a baking sheet.
  5. Scoop the mixture onto the parchment paper and use a spatula to spread it out into a rectangular shape that is about 1/2 inch thick.
  6. Starting from one of the shorter sides of the rectangle, carefully roll up the mixture into a log shape.
  7. Wrap the log in parchment paper and place it in the refrigerator for at least 30 minutes to firm up.
  8. Once the log is firm, remove it from the refrigerator and slice it into rounds that are about 1/2 inch thick.
  9. Arrange the rounds on a plate or serving dish and enjoy!

Notes
