Ingredients

  • 1 cup of basmati rice
  • 1 cup of coconut milk
  • 2 cups of water
  • 1 onion, sliced
  • 2 green chillies, chopped
  • 1 teaspoon of ginger, grated
  • 1 teaspoon of garlic, minced
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of turmeric powder
  • 1/4 teaspoon of salt, or to taste
  • 2 tablespoons of oil
  • 1 sprig of curry leaves
  • 1/4 cup of cashew nuts (optional)

Equipment

  • A pressure cooker or a pot with a lid
  • A pan

Method

  1. Wash the rice and soak it in water for 10 minutes.
  2. Heat oil in a pan and add cumin seeds.
  3. Add sliced onions, chopped green chillies, grated ginger and minced garlic. Fry until the onions are golden brown.
  4. Add coriander powder, turmeric powder, and salt. Mix well.
  5. Add the soaked rice and fry for 2-3 minutes.
  6. Add coconut milk and water. Mix well.
  7. Add the curry leaves and cashew nuts (optional).
  8. Cover the lid and cook for 2 whistles (if using a pressure cooker) or until the rice is cooked (if using a pot).
  9. Once the pressure is released, fluff the rice with a fork.
  10. Serve hot with your favourite curry.

Notes

  • You can also add vegetables like peas, carrots or beans to make it more nutritious.
  • If you do not have coconut milk, you can use grated coconut instead.
  • If you want the rice to be more flavourful, you can add ghee or butter while cooking.
