Ingredients
For the chicken marinade: - 250 gm boneless chicken - 1 tablespoon ginger-garlic paste - 1 tablespoon soy sauce - 1 tablespoon red chili powder - 1 tablespoon cornflour - Salt as per taste For the fried rice: - 2 cups basmati rice - 1 tablespoon oil - 1 tablespoon garlic, finely chopped - 1 tablespoon ginger, finely chopped - 1 onion, chopped - 1 capsicum, chopped - 1 carrot, chopped - 1/4 cup cabbage, chopped - 2 tablespoons Schezwan sauce - Salt as per taste

Method
1. Rinse the rice thoroughly and soak it in water for 20 minutes. 2. In a mixing bowl, add boneless chicken, ginger-garlic paste, soy sauce, red chili powder, cornflour, and salt. Mix well and marinate for 20 minutes. 3. Heat oil in a pressure cooker and add the soaked rice. Saute for a minute and add 4 cups of water. 4. Close the lid of the pressure cooker and let it cook for 2 whistles. Turn off the flame and let the pressure release naturally. 5. In a wok or a deep frying pan, heat oil and add chopped garlic and ginger. Saute for a minute. 6. Add chopped onion, capsicum, carrot, and cabbage. Saute for 2-3 minutes. 7. Add Schezwan sauce and mix well. 8. Add the cooked rice and mix gently, making sure not to break the grains. 9. In the same wok, add the marinated chicken and saute until it is cooked properly. 10. Add the cooked chicken to the fried rice and mix gently. 11. Serve hot with your favorite side dish.
