Description

Ingredients

  • 1 cup rice
  • 2 cups water
  • 2 tbsp oil
  • 1 tsp salt

Method

  1. In a large bowl, mix together the chicken, garlic paste, ginger paste, red chili powder, turmeric powder, salt, vinegar, and soy sauce. Marinate for at least 30 minutes.
  2. Preheat the grill or oven to 180°C.
  3. Thread the chicken onto skewers, alternating with the bell peppers, onions, and tomatoes.
  4. Place the skewers on the grill or in the oven and cook for 20-25 minutes or until the chicken is cooked through. Turn the skewers occasionally to ensure even cooking.
  5. While the chicken is cooking, rinse the rice and soak for 20-30 minutes.
  6. In a pot, bring the water to a boil. Add the rice, oil, and salt. Stir well and cover the pot with a lid. Reduce the heat to low and let the rice cook for 15-20 minutes or until the water is absorbed and the rice is cooked through.
  7. Once the chicken is cooked, remove from the skewers and serve with the rice.

Notes

  • You can also use a grill pan for cooking the chicken.
  • If you don't have skewers, you can also cook the chicken and vegetables in a baking dish.
  • If you want a spicier dish, you can add more red chili powder.
