- 1 cup of rice
- 1 1/2 cups of water
- 2 tablespoons of oil
- 4 cloves of garlic, minced

- 1 chicken thigh, cut into small pieces
- 1 Chinese sausage, sliced
- 1/2 cup of shiitake mushrooms, sliced
- 1 tablespoon of dark soy sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- 1/4 teaspoon of salt
- 1/4 teaspoon of white pepper
- 2 stalks of scallions, chopped

Method
- Rinse the rice with cold water until the water runs clear. Soak the rice in water for 20 minutes.
- In a pot, heat the oil over medium heat. Add the garlic and ginger and stir-fry for 30 seconds.
- Add the chicken and Chinese sausage and stir-fry for 2-3 minutes until the chicken is no longer pink.
- Add the shiitake mushrooms and stir-fry for another 2-3 minutes until the mushrooms are tender.
- Add the dark soy sauce, oyster sauce, soy sauce, sesame oil, salt, and white pepper. Mix well.
- Drain the rice and add it to the pot. Stir well to combine.
- Add the water and stir well. Bring the mixture to a boil over high heat.
- Once the mixture comes to a boil, reduce the heat to low and cover the pot with a lid. Let it simmer for 20 minutes.
- After 20 minutes, turn off the heat and let it sit for another 10 minutes with the lid on.
- Fluff the rice with a spatula and mix in the chopped scallions.
- Serve hot.
