Ingredient

  • 1 cup of rice
  • 1 1/2 cups of water
  • 2 tablespoons of oil
  • 4 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 1 chicken thigh, cut into small pieces
  • 1 Chinese sausage, sliced
  • 1/2 cup of shiitake mushrooms, sliced
  • 1 tablespoon of dark soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of white pepper
  • 2 stalks of scallions, chopped

Method

  1. Rinse the rice with cold water until the water runs clear. Soak the rice in water for 20 minutes.
  2. In a pot, heat the oil over medium heat. Add the garlic and ginger and stir-fry for 30 seconds.
  3. Add the chicken and Chinese sausage and stir-fry for 2-3 minutes until the chicken is no longer pink.
  4. Add the shiitake mushrooms and stir-fry for another 2-3 minutes until the mushrooms are tender.
  5. Add the dark soy sauce, oyster sauce, soy sauce, sesame oil, salt, and white pepper. Mix well.
  6. Drain the rice and add it to the pot. Stir well to combine.
  7. Add the water and stir well. Bring the mixture to a boil over high heat.
  8. Once the mixture comes to a boil, reduce the heat to low and cover the pot with a lid. Let it simmer for 20 minutes.
  9. After 20 minutes, turn off the heat and let it sit for another 10 minutes with the lid on.
  10. Fluff the rice with a spatula and mix in the chopped scallions.
  11. Serve hot.

  • You can substitute the chicken and Chinese sausage with other meats or vegetables if you prefer.
  • If you want a crispy rice crust, you can turn up the heat to high for the last 5 minutes of cooking.
