For the Cornish Hens:- 4 Cornish hens
- 1/4 cup olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons paprika
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups white rice
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas

Method
1. Preheat the oven to 375°F. 2. Rinse the Cornish hens and pat them dry with paper towels. 3. In a small bowl, mix together the olive oil, salt, black pepper, paprika, thyme, and rosemary. 4. Rub the seasoning mixture all over the hens, including inside the cavity. 5. Place the hens in a large roasting pan and roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F. 6. While the hens are cooking, prepare the rice. 7. In a large pot with a lid, melt the butter over medium heat. 8. Add the onion and garlic and cook for 3-4 minutes, or until the onion is translucent. 9. Add the rice, chicken broth, salt, and black pepper to the pot and stir to combine. 10. Bring the mixture to a boil, then reduce the heat to low and cover the pot with the lid. 11. Cook the rice for 18-20 minutes, or until all the liquid has been absorbed and the rice is tender. 12. Remove the pot from the heat and add the frozen peas. Stir to combine. 13. Once the hens are done cooking, remove them from the oven and let them rest for 10 minutes before serving. 14. Serve the hens with the rice on the side.Notes
