Ingredients

  • 1 lb ground beef
  • 2 medium potatoes, peeled and diced

  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 package empanada dough (store-bought or homemade)
  • 1 egg, beaten

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium-high heat.

  4. Add the ground beef to the skillet and cook until browned, breaking up any clumps with a wooden spoon.
  5. Once the beef is browned, add the diced potatoes, tomato paste, cumin, oregano, smoked paprika, salt, and black pepper to the skillet. Stir well to combine.
  6. Cover the skillet and cook for 10-12 minutes, stirring occasionally, until the potatoes are tender.
  7. Remove the skillet from the heat and let the filling cool for a few minutes.
  8. Roll out the empanada dough on a floured surface until it is about 1/8 inch thick.
  9. Using a round cookie cutter or a small bowl, cut the dough into circles.
  10. Place a spoonful of the beef and potato filling in the center of each dough circle.
  11. Brush the edges of the dough with the beaten egg.
  12. Fold the dough over the filling to create a half-moon shape.
  13. Use a fork to crimp the edges of the dough together.
  14. Repeat with the remaining dough circles and filling.
  15. Place the empanadas on a baking sheet lined with parchment paper.
  16. Brush the tops of the empanadas with the remaining beaten egg.
  17. Bake the empanadas for 15-20 minutes, or until they are golden brown.
  18. Remove the empanadas from the oven and let them cool for a few minutes before serving.

Notes

This recipe makes approximately 12-15 empanadas, depending on the size of your dough circles. You can freeze any leftover empanadas for up to 3 months. To reheat, simply place them in a 350°F (175°C) oven for 10-15 minutes, or until heated through.
