Prep Time

Cook Time

The cook time for this recipe is approximately 30 minutes.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 1 cup uncooked white rice
  • 1 can diced tomatoes (14.5 oz.)
  • 2 cups chicken broth
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Equipment

  • A large pot
  • A wooden spoon
  • A knife and cutting board
  • A measuring cup and spoons

Method

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until the onion is soft and translucent, about 3-4 minutes.
  2. Add the chicken to the pot and sauté until browned, about 5-7 minutes.
  3. Add the rice, diced tomatoes, chicken broth, basil, oregano, salt, and pepper to the pot. Stir to combine.
  4. Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  5. Remove the soup from heat and let it cool for a few minutes.
  6. Using an immersion blender, blend the soup until it reaches your desired consistency. Alternatively, you can transfer the soup to a blender and blend until smooth.
  7. Return the soup to the pot and reheat over low heat.
  8. Serve the soup hot, garnished with chopped fresh parsley if desired.

Notes

This soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a pot over low heat until heated through. You may need to add a splash of chicken broth or water to thin the soup out as it thickens in the refrigerator.
