Ingredients

For the chicken:
  • 1 whole chicken
  • 1 tbsp ginger garlic paste
  • 1 tsp salt
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1/2 cup yogurt
  • 1/4 cup lemon juice
  • 1/4 cup oil
For the rice:
  • 2 cups basmati rice
  • 4 cups water
  • 1 tsp salt
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 cinnamon stick
  • 4-5 cloves
  • 4-5 green cardamom pods
  • 1 black cardamom pod
  • 1 bay leaf
  • 1 onion, sliced
  • 2 tbsp oil
  • 2 tbsp ghee

Equipment

  • Grill
  • Large pot with lid
  • Pan

Method

For the chicken:

  1. Clean and wash the chicken thoroughly.
  2. In a bowl, mix together ginger garlic paste, salt, red chili powder, cumin powder, coriander powder, garam masala powder, yogurt, lemon juice, and oil.
  3. Make deep cuts in the chicken and rub the marinade all over the chicken, making sure to get it into the cuts.
  4. Marinate the chicken for at least 2-3 hours, or preferably overnight.
  5. Preheat the grill and grill the chicken until it is cooked through.

For the rice:

  1. Wash the rice thoroughly and soak it in water for 30 minutes.
  2. In a pot, heat oil and ghee and add cumin seeds, coriander seeds, cinnamon stick, cloves, green cardamom pods, black cardamom pod, and bay leaf.
  3. Add sliced onion and sauté until it is golden brown.
  4. Add the soaked rice and sauté for a few minutes.
  5. Add 4 cups of water and salt, and bring it to a boil.
  6. Reduce the heat to low, cover the pot with a lid, and let it cook for around 20-25 minutes or until the rice is cooked through.

You can adjust the spice level of the dish according to your taste. You can also add more or less of the spices to suit your preference.
