Method

  1. Preheat oven to 350°F (175°C).

  3. While the wild rice is cooking, heat olive oil in a skillet over medium heat. Add chicken and cook until browned on all sides, about 5 minutes. Remove chicken from skillet and set aside.
  4. In the same skillet, sauté onion and garlic until onion is translucent, about 3 minutes. Add mushrooms, celery, and carrots and cook until vegetables are tender, about 5 minutes.
  5. Add cream of mushroom soup and sour cream to the skillet and stir until well combined. Add salt and pepper to taste.
  6. Add cooked wild rice and chicken to the skillet and stir until well combined.
  7. Transfer the mixture to a large baking dish and sprinkle with grated parmesan cheese.
  8. Bake for 25-30 minutes, or until the cheese is melted and the dish is heated through.

Notes

Feel free to substitute the chicken with turkey or beef. You can also add additional vegetables such as peas, green beans, or corn to the dish.
