Ingredients
- 1 cup uncooked wild rice
- 4 cups chicken broth
- 1 pound chicken breast, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups sliced mushrooms
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 can cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil

Method
- Preheat oven to 350°F (175°C).
- In a large pot, bring chicken broth to a boil. Add wild rice and reduce heat to low. Cover and simmer for 45 minutes or until tender.
- While the wild rice is cooking, heat olive oil in a skillet over medium heat. Add chicken and cook until browned on all sides, about 5 minutes. Remove chicken from skillet and set aside.
- In the same skillet, sauté onion and garlic until onion is translucent, about 3 minutes. Add mushrooms, celery, and carrots and cook until vegetables are tender, about 5 minutes.
- Add cream of mushroom soup and sour cream to the skillet and stir until well combined. Add salt and pepper to taste.
- Add cooked wild rice and chicken to the skillet and stir until well combined.
- Transfer the mixture to a large baking dish and sprinkle with grated parmesan cheese.
- Bake for 25-30 minutes, or until the cheese is melted and the dish is heated through.
Notes
