Method

  3. Add the chicken broth, wild rice, thyme, and black pepper to the pot, and stir well.
  4. Close the Instant Pot lid and set the valve to the “sealing” position. Cook on high pressure for 25 minutes.
  5. Allow the pressure to release naturally for 10 minutes, then turn the valve to the “venting” position to release any remaining pressure.
  6. In a small bowl, whisk together the cornstarch and water. Add the mixture to the soup and stir well.
  7. Press the “sauté” button on the Instant Pot and cook for 2-3 minutes, stirring continuously, until the soup thickens.
  8. Stir in the heavy cream and cooked chicken, and heat through.
  9. Season the soup with salt to taste.
  10. Serve hot, garnished with chopped parsley.
