- 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
- 1 cup uncooked wild rice
- 1 medium onion, chopped
- 2 large carrots, peeled and chopped
- 2 celery ribs, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 2 tablespoons cornstarch
- 2 tablespoons water
- Salt, to taste
- Parsley, chopped, for garnish

Method
- Press the “sauté” button on your Instant Pot and heat it for a few minutes. Add the chicken pieces and sauté for 2-3 minutes until lightly browned. Remove the chicken from the pot and set it aside.
- Add the onion, carrots, celery, and garlic to the pot and sauté for 3-4 minutes until softened.
- Add the chicken broth, wild rice, thyme, and black pepper to the pot, and stir well.
- Close the Instant Pot lid and set the valve to the “sealing” position. Cook on high pressure for 25 minutes.
- Allow the pressure to release naturally for 10 minutes, then turn the valve to the “venting” position to release any remaining pressure.
- In a small bowl, whisk together the cornstarch and water. Add the mixture to the soup and stir well.
- Press the “sauté” button on the Instant Pot and cook for 2-3 minutes, stirring continuously, until the soup thickens.
- Stir in the heavy cream and cooked chicken, and heat through.
- Season the soup with salt to taste.
- Serve hot, garnished with chopped parsley.
Notes
