Method
- Preheat oven to 375 degrees F.
- In a large skillet, brown the ground beef over medium heat. Drain the excess fat.
- Add the onion and garlic to the skillet and cook until tender, about 3-4 minutes.
- Add the chili powder, cumin, salt, and pepper to the skillet and stir until combined.
- Add the rice, black beans, diced tomatoes, and water or chicken broth to the skillet and stir until combined.
- Bring the mixture to a boil, then reduce the heat to low and cover the skillet. Simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove the skillet from heat and stir in half of the shredded cheese.
- Spray a 9x13 inch baking dish with cooking spray. Transfer the rice mixture to the baking dish.
- Sprinkle the remaining shredded cheese over the top of the rice mixture.
- Cover the baking dish with aluminum foil and bake for 15 minutes.
- Remove the aluminum foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
- Let the casserole cool for 5-10 minutes before serving.
Notes
