Coconut sticky rice pudding is a traditional Thai dessert that is commonly found in street food markets. It is a sweet and creamy dessert made with glutinous rice, coconut milk, and palm sugar. This dessert is easy to make, and it is perfect for a summertime treat.

Prep Time

The prep time for this recipe is about 15 minutes.

Cook Time

The cook time is about 25 minutes.

Ingredients

  • 1 cup glutinous rice
  • 1 1/2 cups water
  • 1 cup coconut milk
  • 1/2 cup palm sugar
  • 1/2 teaspoon salt
  • 1 pandan leaf (optional)

Equipment

  • A rice cooker
  • A medium-sized saucepan
  • A wooden spoon

Method

  1. Wash the glutinous rice in cold water until the water runs clear.
  2. Add the rice and water to the rice cooker and cook until the rice is tender and has absorbed all the water.
  3. While the rice is cooking, make the coconut sauce by heating the coconut milk, palm sugar, salt, and pandan leaf (if using) in a saucepan over medium heat.
  4. Stir until the sugar has dissolved and the mixture has thickened slightly.
  5. Once the rice is cooked, remove it from the rice cooker and place it in a large bowl.
  6. Pour the coconut sauce over the rice and stir until the rice is fully coated.
  7. Cover the bowl with a clean cloth and let it sit for 10-15 minutes to allow the rice to absorb the coconut sauce.
  8. Remove the pandan leaf (if using) and serve the coconut sticky rice pudding warm or cold.

Notes

  • If you don't have a rice cooker, you can cook the rice on the stovetop. Just add the rice and water to a saucepan and bring to a boil. Reduce the heat to low, cover the saucepan, and simmer until the rice is cooked and has absorbed all the water.
  • If you can't find palm sugar, you can substitute it with brown sugar.
  • The pandan leaf is optional, but it adds a nice aroma to the coconut sauce.
