- 2 cups of basmati rice
- 2 tablespoons of vegetable oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 teaspoon of turmeric
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1 teaspoon of salt
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 cup of frozen peas
- 3 cups of water
Equipment
- A large pot with a lid
- A wooden spoon
- A sharp knife
- A cutting board
Method
- Rinse the rice in cold water until the water runs clear, then set aside to drain.
- Heat the oil in a large pot over medium heat.
- Add the sliced onion and minced garlic to the pot and sauté until the onion is translucent.
- Add the turmeric, paprika, cumin, coriander, and salt to the pot and stir to combine.
- Add the diced bell peppers and frozen peas to the pot and sauté for an additional 3-4 minutes.
- Add the rice to the pot and stir to combine with the vegetable mixture.
- Add the water to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for 20-25 minutes, or until all of the water has been absorbed and the rice is tender.
- Remove the pot from the heat and allow the rice to rest for 5-10 minutes before fluffing with a fork and serving.
