Method

  1. Wash the rice thoroughly and soak it for 30 minutes.
  2. Drain the water and add 2 cups of fresh water to the rice.
  3. Cook the rice in a pressure cooker or on the stove until it is completely cooked.
  4. In a pan, heat some ghee or oil.
  5. Add the cumin seeds, mustard seeds, urad dal, chana dal, grated ginger, green chilies (if using), asafoetida, and curry leaves.
  6. Sauté until the dal turns golden brown.
  7. Turn off the flame and let the mixture cool for a few minutes.
  8. Add the cooked rice, salt, and curd to the pan.
  9. Mix well until everything is combined.
  10. Serve the curd rice warm or chilled.

Notes

You can adjust the consistency of the curd rice by adding more or less curd. If the rice is too dry, you can add a little milk to make it creamier.
