Prep Time

Cook Time

The cook time for this recipe is about 10 minutes.

Ingredients

  • 10 rice paper sheets
  • 1 cup of shredded carrots
  • 1 cup of bean sprouts
  • 1 cup of sliced shiitake mushrooms
  • 1 cup of cooked vermicelli noodles
  • 1 cup of cooked shrimp or pork
  • 1 tablespoon of cornstarch
  • 1 tablespoon of water
  • Oil for frying
  • Salt and pepper to taste

Equipment

  • Deep fryer or wok
  • Chopping board
  • Knife
  • Bowl
  • Spoon
  • Paper towels

Method

  1. Soak the rice paper sheets in warm water for about 10 seconds or until soft. Then lay them on a clean, damp kitchen towel.
  2. Combine the shredded carrots, bean sprouts, shiitake mushrooms, cooked vermicelli noodles, and cooked shrimp or pork in a bowl. Season with salt and pepper to taste, and mix well.
  3. Place a tablespoon of the filling mixture on one end of the rice paper sheet, leaving a border of about 1 inch on each side. Fold the sides over the filling and roll tightly. Repeat with the remaining rice paper sheets.
  4. Combine the cornstarch and water in a small bowl to make a slurry.
  5. Heat the oil in a deep fryer or wok over medium-high heat. Dip the rice paper rolls in the cornstarch slurry and then carefully drop them into the hot oil. Fry for about 2-3 minutes or until golden brown.
  6. Remove the rolls from the oil and place them on a paper towel to drain.
  7. Serve the deep-fried rice paper rolls hot with your favorite dipping sauce.

Notes

  • Be careful not to overfill the rice paper rolls, as they may burst open during frying.
  • If you don't have a deep fryer, you can use a wok or a heavy-bottomed pot to fry the rolls.
  • You can also add other vegetables or proteins to the filling mixture, such as cabbage, onions, or chicken.
