Ingredients

  • 2 cups of Basmati rice
  • 2 large onions, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 pound boneless chicken, cut into cubes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons oil
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar
  • 1 tablespoon sugar
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons cornflour
  • 2 tablespoons water
  • 8-10 skewers

Method

For the Rice:

  1. Wash the rice and soak it in water for 30 minutes.
  2. Boil 6 cups of water and add the soaked rice.
  3. Add 1 teaspoon of salt and cook until the rice is tender.
  4. Drain the water and set aside.

For the Shashlik:

  1. In a mixing bowl, add chicken, salt, black pepper, soy sauce, vinegar, sugar, and ginger-garlic paste. Mix well and marinate for 30 minutes.
  2. Preheat the oven to 180°C.
  3. Thread the marinated chicken and bell peppers onto skewers.
  4. Place the skewers on a baking tray and bake for 20-25 minutes or until the chicken is cooked through.
  5. In a pan, heat oil and sauté onions until they turn golden brown.
  6. Add the cooked rice to the pan and mix well with the onions.
  7. Dissolve cornflour in water and add it to the pan. Mix well and cook for 2-3 minutes until the rice is coated with cornflour.
  8. Serve the rice with shashlik skewers.

Notes

To make the dish spicier, add red chilli flakes or green chillies to the marinade. You can also add other vegetables like mushrooms or zucchini to the shashlik skewers. For a vegetarian version, replace chicken with paneer or tofu.
