Method

  1. Heat 1 tablespoon of vegetable oil in a wok or skillet over medium-high heat.

  3. Add the remaining tablespoon of vegetable oil to the wok and add the minced garlic and ginger. Stir-fry for 30 seconds until fragrant.
  4. Add the diced vegetables to the wok and stir-fry for 3-4 minutes until crisp-tender.
  5. Push the vegetables to the side of the wok and add the cooked rice to the center. Stir-fry the rice to heat through and break up any clumps.
  6. Add the cooked chicken or shrimp back to the wok and stir-fry for another 1-2 minutes.
  7. Add the soy sauce, oyster sauce, and sesame oil to the wok and stir-fry for 1-2 minutes until everything is evenly coated.
  8. Season with salt and pepper to taste.
  9. Remove from heat and serve hot.
