For the rice: - 2 cups of cooked rice - 2 tbsp oil - 1 onion, finely chopped - 1 capsicum, finely chopped - 1 carrot, finely chopped - 1/4 cup of peas - 1 tsp garlic, finely chopped - Salt to taste For the Schezwan Sauce: - 2 tbsp oil - 1 tbsp ginger, finely chopped - 1 tbsp garlic, finely chopped - 1 onion, finely chopped - 1 capsicum, finely chopped - 1 tbsp soy sauce - 1 tbsp vinegar - 1 tbsp tomato ketchup - 2 tbsp schezwan sauce - Salt to taste

Equipment:

- A large wok or frying pan - A spatula - A knife and chopping board - A measuring spoon

Method:

1. Heat 2 tbsp of oil in a wok or frying pan. 2. Add the finely chopped onion and garlic and sauté until the onion becomes translucent. 3. Add the finely chopped carrot, capsicum, and peas and stir-fry for 2-3 minutes. 4. Add salt to taste and stir well. 5. Add the cooked rice and mix well with the vegetables. 6. In another pan, heat 2 tbsp of oil. 7. Add the finely chopped ginger and garlic and sauté for a minute. 8. Add the finely chopped onion and capsicum and stir-fry for 2-3 minutes. 9. Add soy sauce, vinegar, tomato ketchup, and schezwan sauce, and stir well. 10. Add salt to taste and stir well. 11. Add the cooked rice and vegetable mixture to the pan with the schezwan sauce and mix well. 12. Stir-fry the rice on high heat for 2-3 minutes. 13. Serve hot.

Notes:

- You can add any vegetables of your choice to this dish. - Adjust the amount of schezwan sauce according to your taste. - You can use leftover rice for this dish.
