  • 1 can diced tomatoes with green chilies
  • 1/4 cup chopped fresh cilantro, for garnish

Method

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chicken and cook until browned, about 5 minutes.
  3. Add the onion, garlic, and red bell pepper and cook for another 5 minutes.
  4. Add the rice, chili powder, cumin, smoked paprika, salt, and black pepper to the skillet and stir well to combine.
  5. Add the chicken broth and diced tomatoes with green chilies and stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
  7. Cook for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  8. Add the black beans and corn to the skillet and stir to combine.
  9. Cover the skillet and cook for another 5 minutes to heat through.
  10. Serve hot, garnished with fresh cilantro.

Notes

You can adjust the spice level of this dish by using more or less chipotle chili powder. If you like it really spicy, you can add some fresh diced jalapeƱo peppers to the skillet.
