- 2 cups of long-grain white rice
- 2 cups of chicken broth
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of paprika
- 1/2 teaspoon of cumin
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of black pepper
- 1/4 cup of diced green onions (optional for garnish)

Method
- Rinse the rice in cold water until the water runs clear.
- In a large pot, heat the olive oil over medium heat.
- Add the rice and sauté for 2-3 minutes until lightly toasted.
- Add the chicken broth, salt, garlic powder, onion powder, paprika, cumin, cayenne pepper, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for 18-20 minutes or until all the liquid has been absorbed.
- Remove the pot from the heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with diced green onions if desired.
- Serve hot and enjoy!
Notes
For a less spicy version of this recipe, reduce the amount of cayenne pepper or omit it altogether. You can also add diced tomatoes, bell peppers, or corn to the rice for added flavor and texture. This recipe can also be made with brown rice, but the cooking time will be longer.Nutrition Info
