  • 1 cup Basmati rice
  • 1 cup corn kernels
  • 1 onion, chopped
  • 1 tomato, chopped

  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 2 cups water
  • Coriander leaves for garnish

Method

  1. Wash the rice and soak it in water for 20 minutes.
  2. Heat oil in a pressure cooker and add cumin seeds.
  3. When the seeds start to splutter, add onion and ginger-garlic paste. Saute until the onion turns golden brown.
  4. Add tomatoes and saute until they turn soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, garam masala powder, and salt. Mix well and saute for 1-2 minutes.
  6. Add corn kernels and rice. Mix well and saute for 2-3 minutes.
  7. Add water and mix well. Close the pressure cooker and cook for 2 whistles.
  8. Once the pressure is released, open the cooker and fluff the rice with a spatula.
  9. Garnish with coriander leaves and serve hot.

Notes

  • You can also use frozen corn kernels instead of fresh ones.
  • Adjust the spice level according to your taste.
  • You can also add vegetables like peas, carrots or beans to make it more nutritious.
