Arroz con Pollo
Arroz con Pollo, or "rice with chicken," is a classic Costa Rican dish that is perfect for a family dinner or gathering. This flavorful dish is made with rice, chicken, vegetables, and spices. It's easy to make and can be customized to your taste.Prep Time: 20 minutes

Ingredients:
- 2 cups of rice
- 4 cups of water
- 1 pound of chicken breast, cut into small pieces
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of tomato paste
- 1 teaspoon of cumin
- 1 teaspoon of oregano
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of cilantro, chopped
- 2 tablespoons of vegetable oil
Equipment:
- A large pot with a lid
- A large skillet
Method:
- Heat the oil in a large skillet over medium heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion, red and green bell peppers, and garlic. Cook until the vegetables are soft, about 5 minutes.
- Add the tomato paste, cumin, oregano, salt, and black pepper. Stir well and cook for 1 minute.
- Add the rice and stir until well coated with the vegetable mixture. Add the water and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20 minutes.
- Add the browned chicken to the pot and stir well. Cover and simmer for another 20 minutes, or until the rice is cooked and the chicken is tender.
- Garnish with chopped cilantro and serve hot.
