  • A large pot with a lid

Method:

  1. Heat the oil in a large skillet over medium heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the onion, red and green bell peppers, and garlic. Cook until the vegetables are soft, about 5 minutes.
  3. Add the tomato paste, cumin, oregano, salt, and black pepper. Stir well and cook for 1 minute.
  4. Add the rice and stir until well coated with the vegetable mixture. Add the water and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
