Description

Deep-fried rice balls, also known as arancini, are a popular appetizer or snack in Italian cuisine. These crunchy, savory balls are made by rolling cooked rice into balls with a filling of cheese, vegetables, meat, or seafood, then coating them in breadcrumbs and deep-frying until golden brown. They are crispy on the outside and soft and fluffy on the inside, making them a perfect bite-sized treat for any occasion.

Ingredients

  • 2 cups cooked rice
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 1/4 cup chopped basil
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 cup vegetable oil
  • Salt and pepper to taste
  • Fillings (optional): Mozzarella cheese, chopped ham, peas, mushrooms, or any other filling of your choice.

Equipment

  • Large mixing bowl
  • Frying pan
  • Slotted spoon
  • Plate lined with paper towels

Method

  1. In a large mixing bowl, combine cooked rice, parmesan cheese, parsley, basil, salt, and pepper.
  2. Beat the eggs in a separate bowl and add them to the rice mixture. Mix well.
  3. Take about 2 tablespoons of the mixture and form it into a ball. Make a small hole in the center of the ball and add a teaspoon of filling of your choice.
  4. Cover the filling with the remaining rice mixture and form the ball into a smooth round shape. Repeat with the remaining mixture and filling.
  5. Place the flour in a shallow dish and roll each rice ball in the flour to coat it evenly.
  6. Heat the vegetable oil in a frying pan over medium heat until hot.
  7. Dip each rice ball in the beaten egg and roll it in the breadcrumbs to coat it evenly.
  8. Carefully place the rice balls in the hot oil and cook for 3-4 minutes, or until golden brown on all sides.
  9. Remove the rice balls from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  10. Serve hot with your favorite dipping sauce.

Notes

  • It is important to use cold, leftover rice for this recipe as it will be easier to shape into balls.
  • If the rice mixture is too sticky to shape into balls, you can wet your hands with cold water to prevent sticking.
  • You can use any filling of your choice, but make sure it is finely chopped or grated so that it fits inside the rice balls.
  • If you don't have breadcrumbs, you can make your own by toasting slices of bread and grinding them into fine crumbs in a food processor.

Recipe Tips
