- 1 cup of long-grain white rice
- 1 tablespoon of vegetable oil
- 1 small onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of salt
- 2 cups of chicken broth
Equipment
- A large skillet with a lid
- A wooden spoon
- A measuring cup and spoons
Method
- Begin by rinsing the rice in a fine mesh strainer and set it aside.
- Heat the oil in a large skillet over medium-high heat.
- Add the diced onion, green and red bell peppers, and minced garlic to the skillet and cook until the vegetables are soft and fragrant, about 5 minutes.
- Add the paprika, cayenne pepper, and salt to the skillet and cook for an additional 30 seconds.
- Add the rinsed rice to the skillet and stir until it is coated with the vegetable and spice mixture.
- Add the chicken broth to the skillet and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a lid.
- Simmer the rice for 18-20 minutes, or until the liquid has been absorbed and the rice is tender.
- Remove the skillet from the heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork and serve hot.
Notes
