  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped scallions
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup olive oil
  • 2 tbsp. rice vinegar
  • 2 tbsp. soy sauce
  • 1 tbsp. honey
  • 1 tsp. sesame oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Method

  1. Prepare the rice noodles according to package instructions.
