Method
- In a large mixing bowl, whisk together the rice flour, cornstarch, salt, and water until smooth.
- Heat a non-stick skillet over medium heat and add the vegetable oil. Add the ground pork and cook until browned, breaking it up with a spoon as it cooks. Add the shrimp, scallions, and shiitake mushrooms and cook until the shrimp are pink and cooked through.
- In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the pork and shrimp mixture and stir to combine.
- Place a steamer basket over a pot of boiling water. Brush the steamer basket with oil to prevent sticking.
- Pour a ladleful of the rice flour mixture into the steamer basket and spread it out into a thin layer. Cover the steamer basket and cook for 2-3 minutes, or until the rice noodle is set.
- Remove the steamer basket from the pot and gently remove the rice noodle from the basket. Place the rice noodle on a plate and spoon the pork and shrimp mixture onto the center of the noodle.
- Sprinkle chopped cilantro over the pork and shrimp mixture.
- Roll the rice noodle around the pork and shrimp mixture, tucking in the edges as you roll, to create a tight roll.
- Repeat with the remaining rice flour mixture and pork and shrimp mixture.
- Serve the Chinese rice rolls hot, drizzled with additional sauce if desired.
