Ingredients

  • 1 cup rice flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 2 cups water
  • 1/4 cup vegetable oil
  • 1/2 pound ground pork
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 cup sliced scallions
  • 1/2 cup sliced shiitake mushrooms
  • 1/4 cup soy sauce
  • 1/4 cup oyster sauce
  • 1 tablespoon sesame oil
  • 1/4 cup chopped cilantro

Equipment

  • Steamer basket
  • Large mixing bowl
  • Non-stick skillet
  • Whisk

Method

  1. In a large mixing bowl, whisk together the rice flour, cornstarch, salt, and water until smooth.
  2. Heat a non-stick skillet over medium heat and add the vegetable oil. Add the ground pork and cook until browned, breaking it up with a spoon as it cooks. Add the shrimp, scallions, and shiitake mushrooms and cook until the shrimp are pink and cooked through.
  3. In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the pork and shrimp mixture and stir to combine.
  4. Place a steamer basket over a pot of boiling water. Brush the steamer basket with oil to prevent sticking.
  5. Pour a ladleful of the rice flour mixture into the steamer basket and spread it out into a thin layer. Cover the steamer basket and cook for 2-3 minutes, or until the rice noodle is set.
  6. Remove the steamer basket from the pot and gently remove the rice noodle from the basket. Place the rice noodle on a plate and spoon the pork and shrimp mixture onto the center of the noodle.
  7. Sprinkle chopped cilantro over the pork and shrimp mixture.
  8. Roll the rice noodle around the pork and shrimp mixture, tucking in the edges as you roll, to create a tight roll.
  9. Repeat with the remaining rice flour mixture and pork and shrimp mixture.
  10. Serve the Chinese rice rolls hot, drizzled with additional sauce if desired.
