Cook Time

The cook time for this recipe is around 20 minutes. This includes cooking the rice and sautéing the onion, garlic, and jalapeño.

Ingredients

  • 1 cup long-grain white rice
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup tomato sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1 tablespoon chipotle peppers in adobo sauce, chopped
  • 1 3/4 cups water

Equipment

  • Medium saucepan with lid
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Wooden spoon

Method

1. Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. 2. In a medium saucepan, heat the oil over medium heat. Add the onion, garlic, and jalapeño and sauté for 2-3 minutes until the onion is translucent. 3. Add the tomato sauce, cumin, salt, and chipotle peppers and stir to combine. 4. Add the rice and stir well to coat the grains with the sauce. 5. Add the water and stir well. 6. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan with a lid. 7. Cook the rice for 18-20 minutes, or until the rice is tender and the liquid has been absorbed. 8. Remove the saucepan from the heat and let the rice sit, covered, for 5 minutes. 9. Fluff the rice with a fork and serve hot.

Notes

For a spicier rice, you can add more chipotle peppers in adobo sauce. If you don't have tomato sauce on hand, you can substitute it with tomato paste or diced tomatoes.

Recipe Tips

To prevent the rice from sticking to the bottom of the saucepan, make sure to stir it frequently while it's cooking. You can also add a tablespoon of butter or oil to the rice before cooking to help prevent sticking. If you don't have a lid for your saucepan, you can cover it with a piece of aluminum foil instead. And finally, if you have any leftovers, store them in an airtight container in the refrigerator for up to 3 days.
