For this recipe, you will need:- 2 cups of rice
- 2 cups of water
- 2 chicken thighs, cut into small pieces
- 1 Chinese sausage, sliced
- 1 tablespoon of oil
- 2 cloves of garlic, minced
- 1 tablespoon of soy sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of dark soy sauce
- 1 tablespoon of Shaoxing wine or dry sherry
- 1/2 teaspoon of sugar
- 1/4 teaspoon of salt
- Green onions, chopped for garnish
Equipment
For this recipe, you will need:- A rice cooker
- A clay pot or any heatproof pot with a lid
- A cutting board
- A knife
- A measuring cup
- A mixing bowl
- A spoon
Method
- Wash the rice in cold water until the water runs clear.
- Place the rice and water in the rice cooker and set aside.
- In a mixing bowl, combine the chicken, Chinese sausage, oil, and garlic.
- Add the soy sauce, oyster sauce, dark soy sauce, Shaoxing wine, sugar, and salt to the mixing bowl and mix well.
- Add the chicken and sausage mixture on top of the rice in the rice cooker.
- Place the clay pot or heatproof pot on top of the rice cooker and cover with a lid.
- Turn on the rice cooker and let it cook until it switches to the “warm” setting.
- Let the clay pot rice sit for 10 minutes before opening the lid.
- Garnish with chopped green onions and serve hot.
Notes
If you don’t have a clay pot, you can use any heatproof pot with a lid. You can also add other ingredients to this dish, such as vegetables, mushrooms, or shrimp.Nutrition Info
