Method

  1. Wash the basmati rice and soak it in water for about 30 minutes.
  2. Heat oil in a heavy-bottomed pan and add cumin seeds, cloves, cinnamon stick, bay leaf, and star anise. Saute it for a few seconds until the spices release their aroma.
  3. Add the chopped onions and green chili, fry until the onions are translucent.
  4. Add ginger-garlic paste and saute for a minute.
  5. Add drained rice and saute for a minute.
  6. Add coconut milk and required water along with salt and coriander leaves. Mix everything well.
  7. Close the pan with a lid and cook on low flame until the rice is cooked and the water is completely absorbed. It takes about 20-25 minutes.
