Ingredients

  • 1 tsp fennel seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 2-3 cloves
  • 2-3 cardamom pods
  • 1-inch cinnamon stick
  • 2 tbsp oil or ghee
  • Salt to taste
  • 2 cups of water

Equipment

  • Pressure cooker or a deep-bottomed pan
  • Knife and chopping board
  • Measuring cups and spoons
  • Cooking spoon or spatula

Method

  1. Wash the rice in water and soak it for 20-30 minutes.
  2. In a pressure cooker or a deep-bottomed pan, heat oil or ghee.
  3. Add the cumin seeds, fennel seeds, mustard seeds, cloves, cardamom pods, and cinnamon stick. Fry them until they release their aroma.
  4. Add the chopped onions and green chilies. Fry them until the onions turn translucent.
  5. Add the ginger-garlic paste and fry for a minute or two.
  6. Add the soaked rice and fry for 2-3 minutes until the rice turns slightly opaque.
  7. Add the turmeric powder and salt. Mix well.
  8. Add the coconut milk and water. Mix well.
  9. Cover the pressure cooker or the pan with a lid and cook on medium flame for one whistle or turn the heat to low and cook for 20-25 minutes.
  10. Once the rice is cooked, let it rest for a few minutes before opening the lid.
  11. Garnish with fresh coriander leaves and serve hot with raita or any South Indian curry of your choice.

Notes

  • You can also add some vegetables like carrots, peas, and beans to make it a more wholesome meal.
  • Adjust the green chilies according to your spice preference.
  • If you don't have a pressure cooker, you can also cook the rice in a deep-bottomed pan. The cooking time may vary in that case.
