Method

  1. Wash the rice thoroughly and soak it in water for 20 minutes.
  2. Grind the grated coconut, green chilies, and ginger to a coarse paste.
  3. Heat oil or ghee in a pan and add the urad dal, mustard seeds, and cumin seeds.
  4. When the mustard seeds begin to splutter, add the red chili and curry leaves.
  5. Add the coconut paste to the pan and fry it for 2-3 minutes.
  6. Now add the soaked rice to the pan and fry it for 2-3 minutes.
  7. Add 2 cups of water to the pan and salt to taste. Mix well.
  8. Cover the pan with a tight-fitting lid and cook the rice on low heat for around 20 minutes.
  9. After 20 minutes, turn off the heat and let the rice rest for 5 minutes.
  10. Fluff the rice with a fork and serve hot.
