Ingredients

  • 1/4 cup of chopped mint leaves

Method

1. Rinse the rice thoroughly until the water runs clear. Soak the rice in cold water for 30 minutes. 2. In a large pot, bring 4 cups of water to a boil. Add the cinnamon stick, green cardamom pods, cloves, bay leaf, and salt. Stir to combine. 3. Drain the soaked rice and add it to the pot. Stir to combine. Bring the water back to a boil. 4. Cover the pot with a tight-fitting lid and reduce the heat to low. Let the rice cook for 15-20 minutes, or until all the water has been absorbed and the rice is cooked through. 5. In the meantime, marinate the meat or vegetables with yogurt, ginger paste, garlic paste, cumin powder, coriander powder, garam masala powder, red chili powder, turmeric powder, and salt. Let it rest for 30 minutes. 6. In a large frying pan, heat some oil over medium-high heat. Add the sliced onion and sauté until golden brown. Remove from the pan and set aside. 7. In the same pan, add the marinated meat or vegetables and cook until golden brown. 8. In a separate pan, toast the cashews until golden brown. 9. Once the rice is cooked, remove the pot from the heat and let it rest for 5-10 minutes. 10. To assemble the biryani rice, layer the rice and meat/vegetables in a large serving dish. Top with the fried onions, raisins, cashews, cilantro, and mint leaves.
