Method

  1. Place the uncooked rice in the bottom of the slow cooker.
  2. Place the chopped onion and green bell pepper on top of the rice.
  3. In a separate bowl, mix together the cream of mushroom soup, cream of chicken soup, chicken broth, salt, black pepper, garlic powder, onion powder, paprika, and dried thyme.
  4. Pour the soup mixture over the vegetables and rice in the slow cooker.
  5. Add the chicken breasts on top of everything, making sure they are evenly spaced out.
  6. Cover the slow cooker and cook on low for 4-6 hours, or until the chicken is cooked through and the rice is tender.
  7. Shred the chicken with two forks and mix everything together well.
