Method

  1. Press the sauté button on the Instant Pot and add the olive oil.

  5. Stir to combine.
  6. Close the lid and set the Instant Pot to manual mode for 10 minutes.

  8. Remove the lid and stir in the frozen peas and carrots.
  9. Close the lid and set the Instant Pot to manual mode for 5 minutes.
  10. Once the 5 minutes are up, allow the pressure to release naturally for 10 minutes.
  11. Remove the lid and stir in the chopped parsley.
  12. Serve hot and enjoy!

Notes

If you prefer a thicker soup, you can add an extra 1/2 cup of rice to the recipe. You can also substitute the peas and carrots for any other vegetables you like.
