For the Chicken Sajji:- 1 whole chicken, cleaned and washed
- 1 cup yogurt
- 2 tablespoons ginger paste
- 2 tablespoons garlic paste
- 2 tablespoons red chili powder
- 1 tablespoon turmeric powder
- 1 tablespoon garam masala powder
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 2 tablespoons lemon juice
- Salt, to taste
- Oil, for basting
- 2 cups basmati rice
- 4 cups water
- 1 tablespoon salt
- 4 cloves
- 4 green cardamom pods
- 1 cinnamon stick
- 2 tablespoons ghee

Method
1. In a large bowl, mix together the yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, garam masala powder, coriander powder, cumin powder, lemon juice, and salt. 2. Add the cleaned and washed whole chicken to the bowl, and rub the marinade all over the chicken, inside and out. 3. Cover the bowl with plastic wrap, and refrigerate for at least 3 hours or overnight. 4. Soak wooden skewers in water for at least 30 minutes. 5. Preheat the grill to medium heat. 6. Thread the chicken onto the skewers, and place on the grill. 7. Baste the chicken with oil every 10-15 minutes, until it is cooked through and golden brown, approximately 1 hour and 30 minutes. 8. While the chicken is grilling, rinse the rice in cold water until the water runs clear. 9. In a medium pot, bring the water, salt, cloves, green cardamom pods, and cinnamon stick to a boil. 10. Add the rinsed rice to the pot, and stir well. 11. Lower the heat, cover the pot with a lid, and simmer for approximately 15-20 minutes, or until the rice is cooked and fluffy. 12. Once the chicken is cooked, remove it from the grill and let it rest for 5-10 minutes. 13. Serve the Chicken Sajji with the fragrant and fluffy basmati rice.Notes
