Method
- In a large bowl, whisk together the olive oil, lemon juice, garlic, salt, black pepper, paprika, cumin, turmeric, cinnamon, coriander, and red pepper flakes (if using).
- Add the chicken cubes to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to 24 hours.
- Preheat the grill to medium-high heat.
- Thread the chicken cubes onto skewers, leaving a little space between each piece.
- Grill the chicken skewers for 8-10 minutes, turning occasionally, until cooked through and slightly charred.
- While the chicken is grilling, rinse the rice in a fine-mesh strainer and transfer it to a small pot with a lid.
- Add the water and salt to the pot and bring to a boil over medium-high heat.
- Reduce the heat to low, cover the pot with the lid, and simmer for 18-20 minutes, or until the water is fully absorbed and the rice is tender.
