1/4 cup rice vinegar
1 tablespoon garlic, minced
1 tablespoon ginger, grated
1 tablespoon cornstarch
2 tablespoons water
Sesame seeds, for garnish
For the fried rice:

2 tablespoons vegetable oil
2 eggs, lightly beaten
1 cup frozen peas and carrots
1 small onion, chopped
2 cloves garlic, minced
3 tablespoons soy sauce
1 tablespoon oyster sauce
Equipment
Large non-stick skillet or wok
Measuring cups and spoons
Bowl for marinating chicken

Method
1. In a bowl, combine soy sauce, honey, rice vinegar, garlic, and ginger. Reserve half of the marinade for basting the chicken later. Add the chicken to the bowl and marinate for at least 30 minutes or overnight in the fridge. 2. Heat a large skillet or wok over high heat. Add the chicken and cook for 6-7 minutes on each side or until fully cooked. Set aside and keep warm. 3. In the same skillet or wok, add vegetable oil and heat over medium-high heat. Add the onions and garlic and cook until fragrant. Add the beaten eggs and scramble until fully cooked. 4. Add the frozen peas and carrots to the skillet and cook until heated through. 5. Add the cooked rice to the skillet and stir-fry for 2-3 minutes. 6. Add soy sauce and oyster sauce to the skillet and stir-fry for an additional 2-3 minutes. 7. Serve the chicken with the reserved marinade and sprinkle with sesame seeds. Serve the fried rice on the side.
Notes
For a vegetarian option, substitute the chicken with tofu or mushrooms. For a spicier version, add red pepper flakes or sriracha sauce to the marinade or fried rice.

Recipe Tips
