Method
- In a mixing bowl, combine the rice flour, water, coconut milk, salt, sugar, vegetable oil, sesame oil, baking powder, and baking soda. Mix well until a smooth batter forms.
- Grease a 9-inch round cake pan with vegetable oil. Pour the batter into the cake pan and smooth out the top with a spatula.
- Fill a steamer with water and bring to a boil. Place the cake pan in the steamer and steam for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cake pan from the steamer and let it cool for 10 minutes. Then, remove the cake from the pan and cut it into bite-sized pieces.
- Heat oil in a frying pan over medium heat. When the oil is hot, add the cake pieces and fry until crispy and golden brown, about 2-3 minutes per side.
- Remove the cake pieces from the pan with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve the crispy steamed rice cake hot with your favorite dipping sauce.
