  • 1 green chili, finely chopped
  • 1/4 cup chopped coriander leaves
  • Salt to taste

  • Small frying pan
  • Wooden spoon

Method

  1. In a large mixing bowl, add cooked rice and curd. Mix well and set aside.
  2. Heat oil in a small frying pan over medium heat.
  3. Add mustard seeds and cumin seeds. Let them splutter.
  4. Add chopped green chili and turmeric powder. Stir well.
  5. Pour the tempering over the curd rice mixture. Mix well.
  6. Add chopped coriander leaves and salt to taste. Mix well.
  7. Cover the bowl with a lid and keep it in the refrigerator for 30 minutes.
  8. After 30 minutes, take out the bowl from the refrigerator and give it a good mix.
  9. Garnish with some more coriander leaves and serve chilled.

Notes

  • You can add some grated carrots, cucumbers or pomegranate seeds to the curd rice for some extra crunch and flavor.
  • Make sure to use fresh and thick curd for this recipe.
