Ingredients

  • 1 tsp mustard seeds
  • 10-12 curry leaves

  • 2 tbsp chopped coriander leaves

Method

  1. Soak the chana dal and rice in water for 3-4 hours.
  2. Drain the water and grind the dal and rice with ginger paste, green chili, salt, and sugar to a smooth batter.
  3. Add the baking soda to the batter and mix well.
  4. Grease a steamer plate with oil and pour the batter into it.
  5. Steam the plate for 15-20 minutes or until the dhokla is cooked.
  6. Remove the plate from the steamer and let it cool for 5 minutes.
  7. Cut the dhokla into small squares.
  8. Heat oil in a small pan and add mustard seeds.
  9. When the seeds start to splutter, add curry leaves, grated coconut, and lemon juice.
  10. Pour this mixture over the dhokla squares and garnish with coriander leaves.
  11. Serve hot with green chutney and tamarind chutney.

Notes

  • Make sure the batter is well fermented to get soft and spongy dhokla.
  • You can also add a pinch of turmeric powder to the batter for a yellow color.
  • Do not overcook the dhokla, or it will become hard and dry.
